Grace Quick & Easy Mackerel Rundown

Yields: 4 servings

Ingredients

3 tablespoon(s) Grace Coconut Oil

3 clove(s) garlic, minced

1 ounce(s) ginger, peeled and sliced

1 sachet Grace Curry Powder

6 whole pimento berries

1 1/2 cups Grace Coconut Milk

1 small onion, chopped

1 stalk(s) scallion, chopped

1 sprig(s) thyme

2 can(s) Grace Premium Mackerel in Brine

1 tablespoon(s) Grace Green Scotch Bonnet Hot Pepper Sauce

1/4 teaspoon(s) Grace Caribbean Traditions Black Pepper (optional)

Grace Quick & Easy Mackerel Rundown Directions

1. In a saucepan heat Grace Coconut Oil, add garlic, ginger and Grace Curry Powder and stir for a minute or two to allow curry to "burn".

2. Add pimento berries, Grace Coconut Milk and onion and cook until onion starts to wilt.

3. Add scallion, thyme and Grace Mackerel and simmer for 5 minutes until sauce is reduced.

4. Add Grace Green Scotch Bonnet Hot Pepper Sauce.

5. Adjust flavour as desired with Grace Caribbean Traditions Black Pepper and serve with your favourite starch, e.g. boiled green bananas, Johnny Cakes or Turn Cornmeal.

GRACE MACKEREL FRITTERS

Ingredients

2 can(s) Grace Classic Mackerel

3 cup(s) counter flour

3/4 teaspoon(s) salt

1/2 teaspoon(s) Grace Caribbean Traditions Black Pepper

1 small scotch bonnet pepper, chopped

1 medium onion, chopped

1 stalk(s) scallion, chopped

1/4 cup(s) sweet pepper, chopped

1 medium tomato, chopped

1 1/2 cup(s) water

1 1/2 cup(s) Grace Vegetable Oil

Mackerel Fritters Directions

1. De-bone and flake Grace Classic Mackerel and set aside.

2. Combine flour, Grace Caribbean Traditions Black Pepper, scotch bonnet pepper, chopped onion, scallion, sweet pepper and tomato.

3. Add the flaked mackerel, mackerel sauce and water and mix well.

4. In a large skillet heat Grace vegetable oil.

5. Use a cook spoon or a 1/4 cup measure to drop the batter into the heated oil.

6. Fry for 5-7 minutes on each side, then drain on absorbent paper.

7. Serve hot with a mug of Grace Roma Cocoa and a ripe banana.
