Preparing Brown Stew Turkey Neck - The ghetto style Oxtail

With all the merriment that comes with the holiday season, persons tend to spend way more than their budgets allow.

Most persons also get paid much earlier than usual in December and will have to wait weeks before their next pay day.

So after much overspending and frolicking during the holidays, a lot of persons are likely to face serious financial constraints in January.

So in this week's feature, we will be sharing a budget-friendly recipe, Ghetto Style Oxtail (Brown Stewed Turkey Neck), courtesy of Grace Foods.

Ingredients (For four people)

n 3 pound(s) turkey necks

n 1/4 cup(s) Grace White Vinegar

n 4 cup(s) water

n 6 clove(s) garlic, chopped

n 1 tablespoon(s) Grace Fish and Meat Sauce

n 2 teaspoon(s) Grace Browning

n 1 teaspoon(s) black pepper

n 1 teaspoon(s) scotch bonnet pepper

n 1 teaspoon(s) salt

n 1 teaspoon(s) ginger, chopped

n 1 teaspoon(s) pimento berries, crushed

n 4 tablespoon(s) Grace Vegetable Oil

n 4 cup(s) boiling water

n 2 stalk(s) escallion, chopped

n 1 sprig(s) thyme

n 1/2 medium sweet pepper, julienne

n 1/2 medium onion, chopped

n 1 can(s) Grace Broad Beans

n 1 cup(s) Grace Tomato Ketchup

n 1 whole tomato, chopped

Directions

Step 1: Cut each turkey neck into two or three pieces. Use a sharp knife to trim away the membrane from each piece. Wash turkey neck in a mixture of Grace vinegar and water.

Step 2: Season turkey neck with three cloves garlic, Grace Fish & Meat Sauce, Grace Browning, black pepper, scotch bonnet pepper, salt, ginger and crushed

pimento berries and allow to marinate for about two hours.

Step 3: Heat Grace Vegetable Oil in a pressure cooker, add seasoned turkey neck and allow to brown for about 10 minutes.

Step 4: Add boiling water, seal the pressure cooker and pressure cook for 25-30 minutes. Remove from flame and allow to cool.

Step 5: Mix in the chopped escallion, thyme, remaining garlic, sweet pepper, onion, Grace Broad Beans, Grace Tomato Ketchup and tomato. Cover and allow to simmer for about 10 minutes.

To serve: Serve with boiled rice and a garden salad.
