Egg Nog
Egg nog is traditionally consumed over the Yuletide season. This recipe is sure to lift your Christmas spirit.
3 cups whole milk
1 tsp vanilla extract
1 tsp ginger powder
6 egg yolks
1 cup granulated sugar
1 tsp cinnamon
2 cups heavy cream
1 tsp mixed spice
1 tsp ground nutmeg
1/4 cup rum
Method
1. Separate 6 egg yolks in a bowl. While using a mixer to whip the eggs, slowly add your granulated sugar, about 2 tbsp at a time.
2. Add milk to a pot and let it come to a simmer, DO NOT BOIL. Once it comes to a simmer, gradually scoop a little into the egg yolk mixture and whisk it together until they are fully combined, add a little more milk and whisk to combine once more.
3. Add vanilla.
4. Pour the mixture back into pot on low heat. Stir consistently for about 10-12 minutes until you have reached your desired thickness. Note that the egg nog will get thicker once cooled.
5. Pour liquid through a strainer into a bowl that is also in an ice bath or cold water to cool down the egg nog.
6. Add cinnamon, mixed spice, ginger powder, nutmeg and rum. Mix together until evenly distributed.
7. Add cinnamon, clove, ginger powder, nutmeg, rum/brandy, and heavy cream.
8. Pour into a container and place in the refrigerator to become chilled and serve with your preferred topping of nutmeg, whipped cream, etc.
