Cream of Yam and Pumpkin Soup

INGREDIENTS

- 4 cups pumpkin - crushed

- 4 cups yellow yam - sliced

- 1/2 tsp salt

-1/8 black pepper

- 4 cups chicken stock

METHOD

- Peel and cut pumpkin and yam in small cubes.

- In a pot bring water to a boil then add salt, pumpkin and yam.

- After boiling, blend the yam and pumpkin, and add 4 cups of chicken stock.

- Return to stove on a low heat and add 2 cups of coconut milk, 1/2 tsp cornstarch, allow to simmer.

- Remove, garnish, and serve

- Salt and pepper to taste
