RASTA PASTA
INGREDIENTS
* 1 pound pasta
* 2 chicken breasts
* 2 tablespoons vegetable oil
* 1 tbsp for frying chicken
* 1 tbsp for sauteing bell peppers
* 3 tablespoons jerk seasoning
* 3 bell peppers
* 1/2 cup green onions sliced
* 2 cloves garlic minced
* 1/4 cup chicken stock
* 1/2 cup heavy cream
* 1/2 cup parmesan cheese grated.
METHOD
1. Cook pasta.
2. Cut chicken breast in cubes, toss in jerk seasoning, and cook until it's golden and cooked through. Then remove from the pot and set aside.
3. Saute bell peppers with green onions and minced garlic. Add jerk seasoning to the pot.
4. Add heavy cream, chicken stock to the pot. Simmer for a few minutes until the sauce thickens, add chicken breast, mix in the parmesan in the sauce and then mix in the pasta.
5. Garnish with chopped parsley.
